wednesday ramblings

:: I finished "The Rescue" by Nicholas Sparks (comments on the sidebar)...and picked up The Reader to breeze through next. I never probably would have picked this book up under normal circumstances, but I recognized it as being one of the Oscar nominees...and the role for which Kate Winslet won Best Actress. I had no idea what it was about or what to expect. It's a pretty short book, and I'm halfway through. My thoughts so far?? Hmmmmmm.

:: It's time to have my allergies retested...I'm doing that first thing Thursday morning. And it can't come soon enough because I've not been able to have allergy medicine or a shot for 48 hours leading up to the testing. For a girl with allergies as bad as mine, that 48 hours is a very, very long time. Things get worse for me when I lay down...my nose doesn't work properly when it is horizontal. I had a very bad night last night and didn't sleep well at all. Maybe 3 hours total. Tonight I plan to prop up some more pillows and sleep a little more vertically and hopefully that will help. Ideally, in the two years I've been doing the allergy shots, my allergies should be decreasing in intensity. I'm not sure that that is the case or ever will be, but I do certainly know that the combination of my weekly allergy shot and my daily Zyrtec pill is allowing me to lead a normal life, fairly snot-free. And there is much rejoicing...

:: My
Jackie Warner workout dvd has arrived and it is kicking my boot-ie. The dvd is divided into three parts: upper body, lower body, and core abs. On Monday, I did the upper body workout. Her moves aren't too difficult, but she makes you do an obscene quantity of each one, until you feel like your muscles are going to explode. Felt fine on Tuesday, but Wednesday has brought with it very sore upper body muscles. On Tuesday, I did the lower body workout, and was immediately sore. Super super sore on Wednesday. So I've got the double doozie of sore upper and sore lower. I'm not walking too gracefully! :) I'm a little leery of trying the core abs workout! Taking tonight off. Maybe I'll try my pilates dvd next...

:: Work has been insanely busy and pretty stressful this week. Problems left and right, the need to be creative quickly, contracts contracts contracts. You may wonder why a graphic designer artsy fartsy type is involved in the technical aspect of working on the insurance contracts...that would be because although I am artsy farty, I am equally analytical and organized and detail oriented. Lucky me ;)

:: Tried a new crockpot recipe Tuesday evening that the whole family enjoyed...thought I would share it here, it's worth a try for sure!

Southwestern Crockpot Chicken

2 cans black beans, drained and rinsed
14 oz organic low-sodium chicken broth

1 can diced tomatoes w/ mild green chiles, undrained
1 8 oz jar chunky salsa
1 can corn

4 chicken breasts
1 tbsp parsley flakes
Sea salt & pepper to taste
3 cups cooked brown rice

Combine all ingredients into crockpot. Cover and cook on low for 6-8 hours. Shred chicken and return to crockpot; heat through. Serve over rice, with sour cream (or non-fat plain yogurt) & shredded cheese for toppings.
