a darn decent day

:: First off, here is the recipe I promised you...

Creamed Chicken with Gnocchi Dumplings

1 lbs potato gnocchi
4 tbsp butter or olive oil
1 onion, finely chopped
1 red bell pepper, chopped
5 tenders chicken, cut into thin strips
4 tbsp whole wheat flour
1 cup skim milk
1 cup chicken broth
2 scallions, chopped
salt and pepper to taste

1. Cook gnocchi according to package. Drain.
2. In a large skillet, heat butter or oil. Add onion and bell pepper and cook, stirring often, until softened. Add chicken and cook through. Season with salt and pepper.
3. In a small saucepan, melt 2 tbsp butter or oil and whisk in flour. Cook until toasted. Whisk in milk and chicken broth. Bring to a boil. Lower heat and simmer until thickened. Whisk into the chicken mixture, then stir in gnocchi. Bring to a simmer, season with salt and pepper, and top with scallions. Servings: 4

:: Had my first book study today on our Waking the Dead book. So far, the book is really good, and I really thought our book study went great today. I'm looking forward to the rest of the chapters...

:: Right now I am reading Best Friends Forever by Jennifer Weiner. Kim gave me this book for Christmas, and so far so good. I'm enjoying it, and it isn't really predictable...I have no idea how it will end!

:: Chris is wanting to begin The Love Dare sooner than my sabbatical...so we will probably be starting that soon. I am looking forward to seeing what comes of it all...

:: This weekend, I am going to go around the house and put back all of our frames and things that have been put away for house selling...I have missed our stuff that makes the house homey...especially the photos. Can't wait to have them back out.

:: This Saturday is my monthly crop and I am looking forward to a day with the girls. And to getting some pages accomplished...my first of 2010!!
