sunday recap of weekend

:: Here we are, another Sunday evening...preparing for the week ahead. Monday comes around quickly, eh?

:: Thursday evening, Chris and I really enjoyed our Love & War seminar...they were really great speakers, and they had the packed Civic Center on rapt attention. I am glad that we were able to listen to them talk about marriage...and I think I will get their book (also called Love & War) so that I can go deeper into what they talked about.

:: Friday evening, me and Chris did 8 miles. Him running, me on the bike. After we cleaned up, we headed to dinner with Aspen at Cotton Patch...then I spent the rest of my evening typing up some recipes in my software.

:: Saturday, we slept a little late...and then I headed to the monthly scrapbook crop. I had a fun day with the girls!! Since I haven't put a quantity goal on myself for pages this year, I had planned to just slow down a little and focus on journaling. Which is exactly what I did, but I still ended up with 16 pages somehow. :) I journaled quite a bit too...very pleased. Will try to post some this coming week. While I was off having fun at the crop, my amazing husband was cleaning the house and doing laundry!! I am a very lucky girl, indeed. Love you Chris!!!

:: Once I got home, we went to meet our friends for dinner at Chili's. That was an enjoyable time, they are fun to hang out with. Then we stopped at Lowes to look at hardwood flooring...since we aren't going to sell the house anymore, we're going to concentrate on doing a few upgrades that we're wanting. One would be ripping the living room carpet up and installing hardwood floors.

:: Today was church and grocery shopping...football games...and a day of rest! Now, this may not sound like rest to you, but I worked on cleaning out my closet. Getting rid of a lot of stuff, and cleaning it. I love to organize, so I didn't feel like I was "working" really :) Today I also made some bread!! First bread I've ever made, and it was Clean and very tasty! Recipe is below:

Blueberry Banana Bread

1 ripe banana, mashed
3/4 cup ground flaxseed meal
2 egg whites
1/3 cup agave nectar
1 cup 1% buttermilk
1 tsp baking soda
1/2 tsp sea salt
3/4 cup whole wheat flour
3/4 cup spelt flour
1 tsp orange rind, grated
1 cup blueberries

1. Preheat oven to 375. Spray a loaf pan with cooking spray.
2. In a large bowl, stir together banana, flaxseed, egg whites, agave and buttermilk.
3. In a separate bowl, mix baking soda, salt, flours, and orange rind. Combine dry ingredients into banana mixture.
4. Gently fold in blueberries.
5. Pour into loaf pan and bake for 45 minutes.

:: This coming week, I get to pick up my new glasses on Tuesday!! Seems like I have been waiting forever. I am ready to give my eyes a break from contacts, so looking so forward to it. Hope your week starts off well!!

A good weekend indeed! Between scrapping with friends and your husband cleaning, you can't ask for better than that. Can't wait to see your new glasses. There are so many cool, fun styles to choose from now. I'd love to have a rainbow assortment of them to go with different outfits. Too bad they aren't as affordable as just plain reading glasses. Have a great week. Will look forward to hearing about your Tuesday meeting.
