:: Today marks the end of week 2 of my Whole 30 -- still going strong! I did a lot of food prep today for the week ahead. Week 3 I am ready for you! I made a big batch of the frozen banana/almond butter treats that I love. Boiled my eggs. Made my egg muffins that I have for breakfast. Made some trail mix. and tried out a new recipe for cauliflower muffins -- they are very crumbly, so I am not sure they turned out right. Not sure how they taste but we shall see. I am trying a few other new things this week too. Making pasta for the family and am subbing out the noodles for spaghetti squash for me. Also going to try making some sweet potato fries as well. Feeling good!
:: Friday evening, Chris and I went to dinner at Jason's Deli -- and then walked around Kohl's for a bit. He was feeling a bit under the weather, so we headed home after that. I found a few fun purchases at Kohl's -- a long maxi skirt, a light pink sweater cardigan, and a plain turquoise tshirt.
:: Saturday morning, Chris and I did a 14 mile ride/run. It was a long journey full of wind, hills, and some rain. Luckily we made it home before it started pouring down, but we were still fairly wet. And exhausted. We relaxed for the rest of the day -- I did the menu and the grocery list, and then registered for our cruise! That evening, we had dinner with Jon and Nadene at Cotton Patch and had a lovely evening together. We then did the grocery shopping and called it a night.
:: Sunday, we had a full morning. Chris and I are part of a group that is facilitating a leadership class at our church. For Chris' session, he wanted a video montage asking random people at church a few questions. So we set up for that this morning and grabbed random people between services. I helped hand out info cards that I designed in the lobby. Busy busy. Then we attended the third service and it was great. After lunch at home, chores and food making. Now I'm finishing up the laundry and about to make supper, then The Walking Dead!
