:: Monday was good!
:: I was able to accomplish a lot today and I just love that feeling!
:: At lunch, I read more of my It Starts with Food book - I cannot believe how much I am learning already! I'm only just beginning Chapter 5. This kind of stuff really excites me -- maybe I missed my calling! :) Nutritionist?? I am learning about how the body works, what it does with different things that we eat, etc. I feel like I am on a strong path to health. Yes, let me lose a little weight in the process. But ideally, I want these changes make me as healthy as I can possibly be. Because, to be honest, I 100% believe that the food Americans eat is making the country overweight and sick.
:: My granny seems a little concerned with my desire to make these healthy changes :) I want to reassure her that I am definitely eating, and eating well. I eat all day long and am never hungry. Just for her, here is a sample of my food today:
Breakfast: 2 hard boiled eggs; bowl of mixed berries; 8 oz unsweetened vanilla almond milk
Snack 1: 1 cup raw broccoli; 1 light string cheese; English breakfast tea
Lunch: 1 can tuna mixed with grape tomatoes and diced avocado; 16 oz water
Snack 2: Trail mix of pumpkin seeds, sunflower seeds, almonds, raisins; 8 oz water
Post Workout: 16 oz water
Dinner: Chicken salad made with 1 can chicken, grape tomatoes, broccoli, black olives, diced avocados, brown rice; 1/3 cup mandarin oranges; 1 hard boiled egg; 16 oz water
So there you go - my day! It is 9:21 and I am absolutely stuffed. When you feed your body the nutrients it needs, it doesn't want any more food. Most diets are filled with food that lacks nutrients, so bodies never reach that full moment. Science is pretty amazing.
:: My group from work is going to begin our Whole 30 challenge this coming Sunday and I am excited! Honestly, my eating won't change drastically from what you see above. There is no dairy on Whole 30, so I won't have any cheese; I also won't have rice. Everything else above would have been a good day on the challenge. I don't anticipate having drastic withdrawl symptoms the first few weeks like most people do, simply because I have been doing a lot of this already. Let's do it! Cutting things out like dairy, where most people feel they get all of their calcium, is not a big deal -- you can get all the calcium you need from the veggies you eat.
:: Ok, didn't mean to talk so much about food -- just wanted to set my granny's mind at ease :)
:: Watching a Beyond Candid interview with Elizabeth Hasselbeck - she is a neat woman. I'd like to learn more about her.
:: Time for a little more reading, and then bed!
