great new recipe!

:: It was not too bad, for a Monday...had a training meeting, celebrated a coworkers birthday, assigned some work, and worked on my own to do list...getting stuff done.

:: After work, zumba was cancelled today...so I did The Beast instead. Got a good 20 minute cardio workout in and then did arms/legs/abs...I'll be sore tomorrow for sure! It's good to let my mind wander for 45 minutes and focus on my health.

:: Made a delicious dinner tonight!!! MMM mmm...the family loved it. Tortellini pasta with a tomato sauce and shrimp. I decided to add the shrimp. Good choice! :) This one will definitely be going into the regular rotation.

Tortellini with Fresh Tomato Basil Sauce and Shrimp

1 pkg uncooked refrigerated cheese filled tortellini
1 24oz can diced tomatoes with italian seasonings
3 tbs basil
1 tsp balsamic vinegar
1/2 tsp sea salt
1/4 tsp black pepper
2 tbsp olive oil
2 large cloves fresh garlic, pressed
1/4 cup Parmesan cheese
1 lb shrimp
Butter

Cook tortellini, drain, and set aside. In the same pot, add olive oil and pressed garlic and saute until brown. Add the can of tomatoes, basil, salt, and pepper. Simmer on medium heat for 10 minutes. Add butter to a skillet and melt. Add shrimp and cook through. Add the tortellini to the pot with the tomato sauce, and stir well. Add the cooked shrimp, stir well. Top with parmesan cheese.

:: I'm reading an interesting book called When I Found You by Catherine Ryan Hyae...so far, it is a good story. A man finds a baby in the woods, the baby goes to live with the grandma, then when it's 15 it goes to live with the man that found him in the woods. I'm wondering where the story will take me. I have also cued up the first book of the Narnia series. The pastor on Sunday mentioned the series and how CS Lewis wrote the 7 book series for his grandchildren so they could understand the gospel. I'm interested to see how that relates!

:: That's about all I've got, I guess...I think I will turn on the fountain and head outside to read and relax...
